Wild Rice Supreme Casserole
 

INGREDIENTS

1 package Uncle Ben's Long grain and wild rice
1/3 cup onion (diced) 
1/4 cup butter
1/3 cup flour
1 teaspoon salt
Dash of pepper
1 cup half and half
1 cup chicken broth
2 cups cubed cooked chicken meat 
3 tablespoon almonds
1 can mushrooms
Shredded cheddar cheese

DIRECTIONS

Cook rice as directed. Sauté onions in butter, blend in flour, salt and pepper. Gradually stir in half and half and chicken broth. Cook until like a medium white sauce (not too thick). Add chicken, almonds, and mushroom. Combine all ingredient in a oven pan and put shredded cheddar on top. Bake 45 minutes at 350°. You can also add 1/2 cup pimiento when adding the chicken, almonds, and mushroom if you like.
