| Preheat
oven to 450 degrees. Rub roast with
kosher salt and black pepper. Place in
shallow pan, rib side down. Roast for 30
minutes and reduce oven to 325
degrees. Allow approximately 20 minutes
per pound, start to finish.

more precise measurement of doneness,
use a meat thermometer with the
following temperatures.
