Prime Rib Roasting Tips
 
Preheat oven to 450 degrees. Rub roast with kosher salt and black pepper. Place in shallow pan, rib side down. Roast for 30 minutes  and reduce oven to 325 degrees. Allow approximately 20 minutes per pound, start to finish.

For a more precise measurement of doneness, use a meat thermometer with the following temperatures.

Doneness Classic Internal Temp. USDA Internal Temp
Very Rare 120° Not recommended
Rare 125° Not recommended
Medium Rare 130° 145°
Medium 135° 160°
